A quick and easy salad to make that you can enjoy anytime. Why not make some to take with you to work?
Paleo Spicy Tuna Salad
2 Cans of Tuna (Oil Packed is Best)
20 Green or Black Olives – Chopped
2 Green Onions – Chopped
1 Jalapeno Pepper – Finely Chopped – No Seeds
3 Tablespoons Capers – Rinsed
1/2 Teaspoon Red Chilli Flakes
Juice of 2 Lemons
Splash of Olive Oil (Extra Virgin if Possible)
1 Head Butter Lettuce or Mixed Greens (Optional)
1 Avocado Sliced
Combine all ingredients except for the lettuce and avocado together in a bowl.
Now place some of the lettuce (or mixed greens) on to a plate and on to this spoon some of the tuna mixture from the bowl.
Now on top of the tuna mixture place some of the slices of avocado.
NB: You can either serve this immediately or if you wish to help enhance the flavour further then store the tuna mixture in the refrigerator for 24 hours or more.
