Doing a trawl of the daily paleo news sites I came across an article that discussed the benefits of baby vegetables over older ones.
I tend to use baby vegetables when I can find them as I think the taste of them is much more intense.
“According to the Journal of Agricultural and Food Chemistry, “micro greens (immature greens that are harvested anywhere from a week to two weeks after germination) may contain even more nutrients and vitamins than their more mature versions.””
But what is far more important to note is that you should be using vegetables that are in season.
Did you know that “Fresh” apples are often stored for up to a year in nitrogen filled tanks? (http://albertsorganics.com/resources/merchandising-tips/controlled-atmosphere-storage-apples-and-pears)
Here is a really cool graphic that shows you when fruit and vegetables are in season, so ensuring that you get ones that provide you with plenty of vitamins, minerals and nutrients that your body needs.
