Dinner can be good without becoming your evening hobby
There are nights when chopping an onion feels reasonable.
Then there are nights when the onion seems to have arrived with paperwork.
This one-pan salmon dinner is for the second kind.
You put salmon, green beans, and small potatoes on a tray, add lemon and herbs, and let the oven take over the meeting.
Strict paleo eaters sometimes avoid white potatoes. If that is you, use sweet potato cubes instead.
No speeches required.
Choose ingredients that finish together
The only difficulty with sheet-pan dinners is timing.
Salmon cooks quickly. Potatoes do not.
So the potatoes get a head start while you do almost nothing.
Then the salmon and green beans join them for the final stretch.
This is less a recipe than a sensible traffic arrangement.
What you need
This serves two, with enough vegetables to make the plates feel abundant.
- Two salmon fillets, 350 g baby potatoes or sweet potato cubes, and 250 g green beans.
- Two tablespoons olive oil, one lemon, one garlic clove, salt, and black pepper.
- One teaspoon dried dill or oregano, plus fresh parsley if you have it.
No fresh parsley?
Dinner will continue.
Give the potatoes a head start
Heat the oven to 220°C / 425°F.
Halve the baby potatoes, or cut sweet potato into small cubes.
Toss with one tablespoon of olive oil, half the herbs, salt, and pepper.
Roast on a large tray for 15 minutes.
Meanwhile, trim the green beans. Mix the remaining oil with the crushed garlic, the rest of the herbs, and the zest of half the lemon.
Move the potatoes aside and add the beans and salmon.
Spoon the lemon-garlic oil over the salmon and beans, then season everything once more.
Roast for another 10 to 13 minutes, depending on the thickness of the salmon.
The fish should flake easily and remain moist in the centre.
Finish it while the tray is hot
Squeeze lemon juice over everything as soon as it leaves the oven.
Add parsley if it made it into the kitchen.
Taste before adding more salt.
That last bit of acid is what stops a simple dinner from tasting sleepy.
If you want a sauce, stir lemon juice and chopped herbs into tahini with enough water to make it pourable.
But the meal does not need one.
Let the tray earn its washing up
Cook two extra salmon fillets if you want lunch tomorrow.
Flake the cold fish over greens with cucumber and avocado.
The leftover potatoes can go beside eggs, if you are still speaking to eggs, or into a quick lunch bowl.
One tray can solve more than one meal.
That is not meal prep.
It is simply making the oven work a full shift.
