The Paleo Lunch That Builds Itself: Crispy Chicken & Sweet Potato Bowl

This is lunch made from things that already know each other

Some recipes introduce twelve strangers and expect you to supervise the conversation.

This is not one of them.

Chicken, sweet potato, cucumber, avocado, and herbs are already on speaking terms.

You roast two of them, chop three of them, and put everything in a bowl.

Lunch is not required to have a plot twist.

The useful part is the contrast

A good bowl needs more than a collection of worthy ingredients.

It needs contrast.

The chicken has crisp edges. The sweet potato is soft and warm. The cucumber snaps. The avocado makes the whole thing feel generous instead of medicinal.

Then lemon and herbs wake it up.

This is why the bowl still tastes like a meal on day two, when meal prep can otherwise resemble an administrative consequence.

What you need

This makes two generous bowls.

  • 450 g boneless chicken thighs, one medium sweet potato, one tablespoon olive oil, smoked paprika, garlic powder, salt, and black pepper.
  • One small cucumber, one avocado, a handful of parsley or coriander, and two large handfuls of greens.
  • Juice of one lemon, two tablespoons olive oil, one teaspoon Dijon mustard, and a pinch of salt for the dressing.

If mustard is not part of your version of paleo, leave it out.

The dressing will survive the disappointment.

Roast first, think later

Heat the oven to 220°C / 425°F.

Cut the sweet potato into small cubes. Toss it with half the olive oil, a pinch of salt, and a little smoked paprika.

Spread it on one side of a large tray.

Cut the chicken into bite-sized pieces and toss with the remaining oil, garlic powder, smoked paprika, salt, and pepper.

Add it to the other side of the tray, leaving enough room for the heat to move around.

Roast for 20 to 25 minutes, turning once, until the chicken is cooked through and the sweet potato has browned corners.

If everything is crowded together like commuters on a delayed train, use two trays.

Crisp food needs personal space.

Build the bowl you want to eat

Whisk the lemon, olive oil, mustard, and salt in the bottom of a large bowl.

Add the greens and toss lightly.

Divide them between two bowls, then add the chicken, sweet potato, cucumber, avocado, and herbs.

Spoon over any dressing left behind.

You can add olives, toasted pumpkin seeds, or sliced radishes if they are nearby.

Do not drive across town for them.

Make tomorrow less demanding

Keep the cooked chicken and sweet potato together in the fridge for up to three days.

Store the fresh vegetables and dressing separately.

When lunch arrives, reheat the warm parts and assemble the rest.

Or eat it cold.

A meal you actually eat is more useful than a meal with excellent theoretical reheating instructions.

Cook once.

Let tomorrow borrow the leftovers.
