Sweet Potato Sunday Hash

20121002-125348.jpg As you can tell if you’ve really explored the blog at all I am a lover of breakfast. I like the time of day where I can look at my list and feel like I really can do it all. I like the standard breakfast fare of bacon and eggs. I love coffee with coconut milk in the morning(and sometimes in the afternoon….). and I really love breakfast on the weekend because I feel like I can take a little more time to cook something, Take a little more time to enjoy that something. Then pack up any leftovers to get us started for the week.

This sweet potato hash is a favorite on Sunday (and Mondays, Tuesdays…..). I first saw something like this in Everyday Paleo a couple of years ago and we have been making it ever since…

Sweet Potato Sunday Hash

  • Place a large skillet over medium high heat and begin to brown your onions(you can do this with or without grease depending upon your skillet)
  • Once the onions begin to soften add your raw sausage(casings removed) and brown it with the onion
  • After the sausage begins to brown add your grated sweet potatoes and continue stirring periodically
  • Once the sausage has cooked through and the sweet potatoes are softening place the hash under your broiler for a few minutes to crisp things up. If your skillet isn’t oven safe don’t dismay. Just let the hash continue to sit on the burner over high heat for a few minutes without stirring- you will get a nice crispy bottom this way as well.
