This Paleo Sweet Potato Pesto salad is packed full of flavor and nutrients that our bodies need.
  • 2 Medium Sized Sweet Potatoes
  • 3 Tablespoons (45 ml) Olive Oil (Extra Virgin Preferably)
  • ½ Teaspoon (2.5 ml) Salt
  • 1 Teaspoon (5 ml) Black Pepper (Freshly Ground If Possible)
  • ¼ Cup (60 g) Paleo Pesto
  • ¼ Cup (60 g) Pine Nuts
  • 1 Tablespoon (15 ml) Water
  1. • For this recipe, you may use an oven or you may roast your sweet potatoes on the grill along with your favorite barbecue or kebabs. Preheat your oven to 425°F (220°C).
  2. • If you’re using an oven:
  3. o Prepare an oiled baking sheet. Peel and rinse your sweet potatoes and cut into chunks (the size depends on you).
  4. o Toss the sweet potato chunks with olive oil, salt, and pepper.
  5. o Bake in the oven for 20 minutes or until the edges of the chunks start to turn brown.
  6. • If you are using the barbecue grill:
  7. o Rinse and cut sweet potatoes in half.
  8. o Coat cut sweet potatoes with olive oil, salt, and pepper.
  9. o Grill sweet potatoes until firm to the touch.
  10. o When the sweet potatoes are ready, peel the skin and cut into chunks (again, the size of the chunks depends on you).
  11. • Once your sweet potatoes are ready, toss with your prepared Paleo pesto in a bowl.
  12. • Let your sweet potato pesto salad cool before you serve. Sprinkle pine nuts before serving and enjoy!
