Ingredients
  • 2 Whole Eggs (Organic If Possible)
  • Extra Egg Yolk (This is for every 2 whole eggs, you can keep and use the egg whites in other recipes)
  • Salt and Pepper to taste
  • 2-3 Tablespoons (30-45 ml) Full-Fat Coconut Milk
  • 2 Tablespoons (30 ml) Coconut Oil or Ghee for cooking
  • Your Choice of Herbs or Spices
Instructions
  1. • Let the eggs you will be using sit at room temperature for a few minutes. If you are running out of time, considering that it is not a Slow Sunday, you can run the eggs under warm water for a minute or two.
  2. • Take a saucepan and crack the eggs into, not forgetting to add the extra yolk and coconut oil or ghee.
  3. • Place the saucepan over medium heat and stir the eggs slowly until the eggs start to break up. Stirring plays a big importance in this recipe, so keep stirring but do not stir too quickly.
  4. • Once you see the eggs starting to stick to the pan, remove from the heat for 10 seconds. Do not stop stirring the eggs. Put the pan back on the heat for a further 20-30 seconds and just keep stirring.
  5. • Repeat the process four times or until you notice the eggs starting to become more solid. Take the pan completely off the heat when the eggs reach the right texture for you.
  6. • Add the salt, pepper and the herbs or spices and mix them into the eggs.
  7. • Serve whilst the scrambled eggs are hot and fluffy enjoy it with your Paleo bread, bacon, and coffee.
