Paleo “Pasta” And Clams

20120801-220807.jpg Wow, I am just going through drafts of recipes I never quite finished up to publish and there is a ton of good stuff ready to go! It makes me realize I need to be more organized in this process and actually follow through.

This recipe was incredibly delicious and has been made a few times over since I uploaded these pics and thought I posted… Oops.

I used a bunch of fresh clams in addition to the canned ones I had because it was summer and they were local and fresh. However this is also a great, easy recipe to keep all of the non perishables stocked for to make anytime. Easy, last minute options!!!

Paleo Pasta and Clams

  • Heat a large skillet over medium/high heat
  • Add your fat and garlic and saute for 1-2 minutes
  • Pour in the can of chopped clams including the juices
  • Add the bottle of clam juice
  • Bring this sauce mixture up to bubbling
  • Turn heat down to medium and toss in the clams(cleaned and sorted before hand of course)
  • Cover and watch the clams until they open to signify they are cooked to completion

You can handle the pasta one of two ways:

  1. blanch it in boiling water for 2 minutes while sauce is cooking
  2. pour the sauce out of the large skillet when completed and quickly stirfry the zucchini noodles

 

Combine everything on a large platter and have at it. Our kids love clams and serving themselves off of a big communal plate.
