Paleo Chilli Taco’s – A Paleo Recipe That Fit’s Any Party

Who doesn’t want tacos? This versatile recipe meal can get everyone’s mouth watering. Taco recipes can be as simple or as complicated as a person desires. But is it possible to make this all-time favorite, Paleo friendly? Yes, and it is very easy to do it, too!

When we talk about parties, there will definitely be room for tacos, burritos, and all those hot Mexican dishes. If there is one dish that can probably fit any party (even a kid’s party!), it’s tacos. However, for a person who is in love with tacos and practicing the Paleo diet, it just doesn’t fit. And this is very frustrating.

The filling can be changed into Paleo friendly fillings, but the taco tortilla is where the issue of staying Paleo friendly becomes a big challenge. For months now, I’ve been trying to make tortillas that are Paleo friendly, but so far what I make are nowhere near the real thing. Until I came across this very easy tortilla recipe that is also very Paleo.

This recipe is for keeps, especially if you are as in love as I am when it comes to Mexican food. If you also need to feed lots of people, tacos can be a great meal that can fill up their tummies and still be healthy. Have any left-overs in the fridge? Using them in tacos will never be a problem. So here is the recipe for my chili taco filling and Paleo friendly tortillas.

A delicious and filling recipe that will spice up any meal.
Ingredients
  • 2 lbs (907 g) Lean Grass-Fed Beef - Ground (This is the best option, but if it is not possible to get such beef then the use of regular ground beef is fine)
  • 2 Medium Sized Onions - Chopped
  • 1 Large Green Bell Pepper - Chopped
  • 1 Large Yellow Bell Pepper - Chopped
  • 4 Garlic Cloves – Finely Chopped
  • 2 lbs (907 g) Tomatoes (Fresh or Canned)
  • 1 ½ Cups (355 g) Beef Stock
  • 3 Teaspoons (15 g) Chili Powder (less or more, it depends on how hot you want your filling will be)
  • 2 Teaspoons (10 g) Cumin
  • 1 Teaspoon (5 g) Oregano
  • 1 Teaspoon (5 g) Garlic Powder
  • 1 Teaspoon (5 g) Onion Powder
  • 1 Teaspoon (5 g) Cayenne
  • Salt and Pepper (freshly ground if possible) - To Taste
  • 1 Tablespoon (15 g) Coconut Oil
Instructions
  1. • Ready your pan, preferably big enough for your ingredients.
  2. • Sauté the onions and peppers with the coconut oil over medium-high heat. Cook well for 5 minutes and season with salt and pepper to taste.
  3. • Add beef and garlic, then let the beef cook until brown for about 7 minutes.
  4. • Add tomatoes and the rest of the spices and bring the mixture to a boil.
  5. • Reduce the heat under the pan and let the filling simmer for 1-2 hours.
  6. • Serve whilst hot.

Paleo-Friendly Tortilla’s

Ingredients For The Paleo Tortilla’s

  • 1 Teaspoon (5 g) Ghee – Melted (you may also use melted coconut oil)
  • 1 Tablespoon (15 ml) water
  • 2 Eggs
  • ¼ Cup (59 g) Arrowroot Powder
  • 1 Teaspoon (5 g) Coconut Flour
  • Pinch of Salt

Let’s Cook The Tortilla’s

  • In a medium-sized bowl, whisk together the eggs, ghee, and water thoroughly.
  • Add the arrowroot powder, coconut flour and salt to the egg mixture. Mix the batter well.
  • Place a small skillet over medium to high heat. Pour in about 1/3 of the batter and roll it around immediately. This will help even out the batter.
  • Cook the tortilla for 1 minute on each side. You’ll notice that the tortilla will pull away at the edges as it cooks.
  • Serve whilst hot together with your Paleo chili filling.

Worried how the tortilla shell will hold itself? With the batches I made, I proved that it can pretty much hold up to the rolling or folding. I kept the batches in an airtight container so the crispness of the tortilla shell is retained. If you want to freeze the shells, that won’t be a problem as well. Each frozen tortilla shell will thaw perfectly and be flexible again.
