Pale-O Man, My Rellenos Fell Apart – A Mexican Stir Fry Recipe

roasting peppers on a gas stove So I made a bunch of beef “taco” meat 2 days ago with the intention of making chile rellenos right then. The stars didn’t line up correctly and the rellenos never got made. I had 4 poblano peppers in the fridge(a rare find here in the great state of CT- oh how I miss my Colorado roots) that were starting to get a little soft and tonight was the night to use them.

Paleo Chile Rellenos(or in tonight’s case Pale-O Man My Rellenos Fell Apart Stir Fry)

  • Roast your chiles. The easiest way to do this is over an open flame on a stove top or grill. A broiler will also work. Just expose the chiles to hi, direct heat until the skin chars and continue turning them around until the entire pepper is blackened. When I time it right and am home in Pueblo, CO in the fall I get a bushel of roasted chiles and eat them all year. Sometimes my peeps hook me up if I miss the window. This year my chile connections fell through so I’ve been scraping by back here on the East Coast- even using canned chiles on occasion(sheer sacrilege…).
  • Place the chiles in a pot with a lid (or a paper bag) and let them steam for a few minutes. This will help you in removing the skin which is the next step.
  • Peel the black skin off of the peppers. Feel free to run the peppers under water as you do this but some people say you will lose a lot of the flavor in the pepper if doing so.
  • Remove the tops of the peppers and slice down the side of one an opening large enough for you to spoon the meat filling in.
  • Using toothpicks, close the opening.
  • Separate your eggs and whisk the egg whites until stiff. Fold in the yolks.
  • Take your stuffed peppers, rellenos, and dry them off. If you wish at this point you could dredge them in some coconut or almond flour to help the eggs “stick”
  • Dredge the rellenos through the eggs
  • Place in a hot skillet and cook until the egg sets and flip them over to the other side and repeat.
  • If you have a chile relleno catastrophe like I did tonight everything will fall apart. Don’t despair. Just chop the peppers up, remove the toothpicks, and spoon it all in to bowls.
  • Garnish with fresh avocado slices and paleo pico de gallo or other salsa.
  • Finish it off with a sprig of cilantro if you have some and eat it up.
