Home Again Home Again, And A Sarah Scramble

20120728-150500.jpg Home again, home again, jiggity jig. Yep, I love that little ditty, I would love even more one day to go to market to buy a fresh hog. Actually that is next on my list, looking for a locally raised and butchered pig. Ok, let’s get back on topic…

We got home last night after 10 days away. We left for Lake Placid the Wednesday before after 24 hours of crazy work, lots of cooking, and the necessary packing. In the 12 hours before we departed I am not kidding when I tell you that I made:

  • Paleo Blueberry Pies
  • Peach Blueberry Paleo Cobbler
  • 6 lbs of Beef Jerky
  • A Pot Roast
  • A ton of hard boiled eggs
  • Cleaned and Peeled 2 Lbs of Carrot Sticks

I did this partially because I wanted to have recipes to blog while I was away(it didn’t happen, but they’re coming…) and partially to have good food options to eat while we were traveling.

Now that we’re home I’ve got the cooking bug again and went and spent WAY too much money on groceries this morning. Then again, we were out of everything so instead of several little trips over the course of a week or so I consolidated everything in to one stop today- the bill left a mark…As a side note, I need to remember not to shop the morning after coming home from a 10 day road trip without unpacking the car…

So what will I be cooking this week?

  • BACON(I got a 4lb slab of pork belly to cure and smoke our own bacon!!!!- see, I need to get that hog)
  • Paleo Pasta(ok zucchini noodles) and Little Neck Clams
  • Turkey Burger Sliders
  • Chicken Stir Fry with Bok Choy and other Veggies
  • Pulled Pork and Cole Slaw
  • Some Crazy Italian Sausage Kabobs I saw an idea for in Women’s Day(my super sweet grandmother sends me this every month which I dutifully flip through)- Hoping they are a hit with the kiddos
  • Beef Barbacoa

Before all of this shopping though I was so glad to be home I made a big breakfast. We stopped and got eggs, bacon and milk for Cal on our way home last night. I was thinking some on this trip about my upcoming trip to Colorado(so much for being present) and how excited I am to visit my awesome friend Sarah. Sarah came and stayed with us about a year ago for a few days and was totally engulfed by our chaos from the minute she arrived. She took it all in stride, hopefully enjoyed herself, and made us some awesome breakfasts. She would lovingly chop whatever produce we had in the morning and make us a nice big scramble.

I honestly don’t usually take the time to do this, or just don’t divert from my standard kale or other keafy greens in the morning with my eggs, but I should! I saw an old zucchini on the counter that had survived our time away and a tomato in the fridge. The result was a nice welcome home with plenty of energy to fuel me through the morning, and early afternoon….

Sarah Scramble

  • Heat the skillet to medium high and add your oil.
  • Add the zucchini and stir until slightly golden but still firm(just a couple of minutes)
  • Add the tomato, stir for a minute
  • Whisk the eggs and chives together in a bowl
  • Pour mixture over veggies in skillet
  • Scramble the eggs until cooked through

I served ours with bacon but this would be a hearty breakfast just as is too.

OK, off to make the most of my two hours time with no kiddos, I need to finish the trim in my office/studio. I promised myself after Ironman I would make time to paint again so now I need to create space to do just that.
