Ingredients
  • 3 lb (1.36 kg) Chuck Steak – Bone In
  • 2 Cups (475 ml) Broth
  • 1 x 14 oz (396 ml) Can Chipotle in Adobo Sauce (Or 4 Peppers and 2 Tablespoons Sauce) - Diced
  • 2 Medium Sized Onions - Diced
  • 2 Tomatoes - Diced
  • 2 Tablespoons (30 g) Cumin
  • 1 Tablespoon (15 g) Oregano
  • Salt and Pepper to Taste
Instructions
  1. • Prepare your chuck steaks by sprinkling them with salt and pepper. Set them aside.
  2. • Place a large skillet over a medium heat and add the fat of your choice. If you are not sure of what fat to use, you can try ghee. But if you don’t have a great deal of time to spare first thing use some coconut or olive oil instead.
  3. • When the fat is hot, brown the prepared chuck steaks on each side. This will only take about 3-4 minutes on each side.
  4. • Place the browned chuck steaks in the crock pot and now prepare the rest of the ingredients.
  5. • In the same skillet, cook the onions until soft. Usually, this will take around about 5 minutes or so.
  6. • Add the tomatoes and peppers to the softened onion and sauté for a minute.
  7. • Add the cumin, oregano and broth to the skillet and let it reach boiling point. Scrape any bits from the bottom of the pan.
  8. • Pour the mixture into the crock pot over the chuck steaks.
  9. • If you are doing this and running out of time, you can set the crock pot on high for 4 to 6 hours. If you have more time, you can set the crock pot on low for 8-10 hours.
  10. • When the dish is cooked, remove it from the crock pot. Remove the bones from the chuck steaks and shred the meat with a fork according to your preferred size of chunks.
  11. • You can discard the strips of fat but you may want to keep them as they add even more flavor to the dish.
  12. • Serve while hot and enjoy!
The great thing about this dish is if you want you can prepare everything the night before.  Place everything into an airtight container and refrigerate.  Then the next morning you simply transfer everything into the crockpot or slow cooker and leave to cook whilst you are out.
