Grain Free Goodness – Apple Cinnamon Muffins

The other night I was cooking chili and I actually started to look for a paleo corn bread recipe… Yeah, that lasted all of two seconds when I realized it would be impossible…. Even after a few years of this sometimes I forget. My husband recommended pumpkin bread which was a great idea then I realized we had a whole drawer of apples from a trip to the orchard and I decided I should do something with some of them.

I searched the Internet for some ideas and found a great looking recipe for Apple Cinnamon Muffins that were referred to as airy heaven bread. Sounded good to me… Of course after starting to pull everything together I made a few changes as I saw fit or necessary due to available ingredients or convenience and really loved the finished product. Every one who was eating over that night kept saying, “Uh, excuse me, how are these paleo….?” I’ll be honest, I ate 4 of them….. with dinner.After that they were gone so there is no telling what the final count might have been.

These fit the bill as long as you use Coconut Oil. I didn’t, mainly because I didn’t have enough left, it was 30 minutes before dinner, there were 5 kids in the house, and I still find it ridiculous that Lurong has “outlawed” pastured butter from the challenge. I’ll take a cheat for the night, it was worth saving time and absolutely delicious. That being said, they would be just as tasty with coconut oil…

Grain Free Apple Cinnamon Muffins

  • Preheat oven to 350 degrees
  • Peel and slice three apples. Cut 2 into chunks and dice the third one into 1/4″ chunks
  • In a large bowl place the two chunked apples, 6 eggs, melted fat and honey. Using your immersion blender, puree until smooth. If you have a regular blender this will work to as will a food processor. The main objective is to puree and combine the apples with everything else
  • Pour in the almond flour, cinnamon and baking soda and mix until combined
  • Line two (12) muffin tins with silicon muffin liners. You can also use paper but Paleo baked goods usually stick to the paper and you don’t get to enjoy the whole things…
  • Bake the muffins for 25 minutes, do the toothpick test to confirm done
  • Eat em up…. soft and spongy and so delicious.
