Liver & Onions

A quick and simple recipe that allows you to include more offal in your Paleo diet. If you've never tried liver before then use either lambs or calves livers in this recipe as the flavor isn't as strong as that of pigs liver.
  • 2 Large Slices Pork or Beef Liver (Or 4 Small Lambs Livers)
  • 3 Large Onions - Sliced (I prefer using red rather than white onions)
  • 4 Tablespoons Lard or Butter
  • Salt and Freshly Ground Pepper
  1. Heat a large frying pan or skillet over a low to medium heat
  2. To this add 3 tablespoons of lard or butter
  3. Once the lard or butter has melted to this add the sliced onions
  4. Cook the onions slowly, making sure that you stir them frequently
  5. The onions need to cook until they have caramelized. This will take around 20 to 25 minutes.
  6. Once it is close to the onions being cooked place another frying pan or skillet on to the hob on a medium to high heat
  7. In this second frying pan or skillet place the rest of the lard or butter.
  8. Once the fat has melted to this add the livers which you have sprinkled with some salt and pepper
  9. Cook the pigs or cows livers on each side for 3 minutes. If using lambs livers cook on each side for 1½ minutes
  10. Once the liver is cooked place on to a serving plate and top with the caramelized onions and serve
  11. If you want you can add a little more zing to this dish by placing some homemade salsa on the plate as well
