Paleo Pecan Pie

Although a favorite for Thanksgiving this delicious and tasty recipe can be enjoyed throughout the year.
  • Crust
  • ½ Cup (120 g) Coconut Flour
  • ½ Cup (120 g) Coconut Flakes - Unsweetened
  • ½ Tablespoon (8 ml) Maple Syrup
  • ¼ Teaspoon (1.25 g) Sea Salt
  • ¼ Cup (60 ml) Coconut Oil
  • 3 Egg Whites
  • Filling
  • 1 Egg White
  • 1 Egg
  • 1 cup (237 g) Maple Syrup
  • ¼ Cup (60 g) Coconut Crystals
  • 2 Tablespoons (30 g) Arrowroot Powder (For slurry)
  • 2 Tablespoons (30 ml) Water (For slurry)
  • ¼ Teaspoon (1.25 g) Sea Salt
  • ¼ Teaspoon (1.25 ml) Vanilla Extract
  • 6 Oz (178 g) Pecan Halves
  1. For the Crust
  2. • We’ll be using the oven, so make sure you preheat it to 400°F (205°C).
  3. • Grease a pie pan or spring-form pie pan with a little coconut oil and set aside.
  4. • Mix the maple syrup, sea salt, coconut oil and egg whites in a medium-size bowl, making sure all ingredients are combined well.
  5. • Into the bowl, sift the coconut powder and coconut flakes. Continue mixing everything until thoroughly combined.
  6. • Press the dough evenly and thinly into the prepared pan. Prick the set dough several times with a fork.
  7. • Bake the dough uncovered for 10 minutes. You can make the filling whilst you wait for the crust to bake.
  8. For the Filling
  9. • Make the arrowroot slurry by combining the arrowroot powder with water. Mix the ingredients well.
  10. • Using a processor, combine the egg white, egg, maple syrup, coconut crystals, sea salt, vanilla extract, and the arrowroot slurry. Blend the ingredients well.
  11. • Into the pie crust, place the pecan halves.
  12. • Pour the filling mixture over the top of the pecan halves.
  13. • Before putting the pie back into the oven, cover the edge of the pie with tin foil. This will prevent the pie crust from burning.
  14. • Bake the pie for 40 minutes or until the filling has set.
  15. • Remove the pie once it is cooked and serve whilst still hot. You can serve this with your favorite Paleo drink. Enjoy!
