Earthy Carrot and Red Pepper Soup – Have Leftovers? Make Soup!

20121002-125722.jpg Soup, I love soup. Like really, really love it. I also love fall, it’s by far my favorite season. I particularly love soup and fall together.

What do I love about soup so much? I love the fluid quality, the ease of consuming it, the warmth it brings(don’t get me started on cold soups- not a fan- as far as I’m concerned cold soups are smoothies…) and I really love the ability to take a hodge podge of leftovers from my fridge and turn them in to something delicious. That’s exactly what I did with this tasty red pepper and carrot soup. If I wasn’t using up sliced red peppers from my fridge that were turning soft I would have roasted the peppers in advance instead of sauteing them. Either way works, I just find that roasting the peppers gives a particular sweetness that sauteing them can not. That being said, using left over slightly soft red peppers gives life to produce that would otherwise be pitched…

I like to make at least one pot of soup each week so I have a fall back for a quick bite when I’m hungry and want something quick and easy to eat. If you’re tired of the chicken soup you’ve been making after roasting your chicken, this is a nice alternative.


Carrot and Red Pepper Soup

  • Heat a large skillet or sauce pan over medium/high heat
  • Add your oil/grease (I used bacon fat) and saute your garlic, coriander and cumin
  • Saute the peppers in this mixture until soft
  • If cooking the soup in the stove top add your carrots and broth to the pot and bring to a boil. Once boiling occurs cover the pot, turn the heat to low and simmer until carrots have fully softened
  • If cooking in a crockpot place all ingredients in crockpot and place on high heat for 4-6 hours
  • After soup has finished cooking use an immersion blender to puree all of the vegetables into a smooth consistency. You may find the soup a bit thick, if so add more chicken stock to thin it
  • Garnish with pepitas before serving
