Comfort – Carrot Leek Soup Even In the Summer

Paleo Carrot Leek Soup What a day, what a day!!! Like everyone, most days are non-stop, packed to the brim and then some busy. I’ve got kiddos, a job, a business, an Ironman in two weeks and……. now this blog that is actually bringing me great joy:)

That being said I’ve been needing to slow down and find comfort in little things to refocus on all that which is important. I never really totally lose sight of any of it, but on occasion life can knock even the best lens out of focus. One thing that I love to eat and I love to make even more is hot soup. Slow cooked, silky smooth, HOT, soup. This always brings me some solace and this afternoon I needed it.

I have had a ton of carrots (ok, only 4 lbs but that’s a lot of carrots) sitting in my fridge for a couple of weeks now and I kept thinking I needed to do something with them before they went bad. I also had some beautiful leeks that I bought a week ago that were nearing their end. So this afternoon, in the midst of everything I took a few minutes to regroup and went in to the kitchen. I threw an eggplant in the oven to roast for paleo baba ganoush then chopped my leeks and browned them in butter. I then added my cleaned carrots, cumin and broth, plopped a lid on the pot and was back to work. I let the pot simmer all afternoon and found myself busy with work phone calls, the kids, a data feed crisis, an oil based paint catastrophe(who the hell bought oil based paint for my office doors???) and probably other things. Suddenly it was 6:30 and I had no dinner started and no time to make the chicken I had in the fridge that I planned on cooking. Thank goodness for the carrots on the stove.

I whipped out my immersion blender, pureed the heck out of everything, browned some bacon and pepitas and had the most lovely bowl of soup a gal could hope for in the midst of insanity.

So, Hot soup in the summer? Absolutely. I ate mine outside on the deck with Steve and the kiddos and enjoyed every last bite, comfortably….

Paleo Carrot and Leek Soup

  • Heat large pot and add butter
  • Chop leeks into rounds and add to butter
  • Saute until soft and add cumin
  • Clean carrots and add to leeks and butter. I usually just break my carrots in half and cook them in large pieces
  • Add chicken stock
  • Bring to boil
  • Cover
  • Reduce to simmer. Simmer until carrots are soft or as long as you want to.
  • Blend until smooth
  • If you want to make this soup extra hearty garnish with bacon and some roasted pepitas
