Cinnamon Banana Waffles

Who Doesn’t like Waffles?
Who doesn’t like FAST waffles ?
During my daily trawl through various paleo sites I came across this awesome Waffle recipe. (PaleoOMG)
One Issue I had was that I didn’t have any Arrowroot powder, In the scheme of things a little bit of cornstarch wouldn’t be the end of the world however I found some almond flour and used that instead.  If you don’t have any Arrowroot to thicken things up then your going to have to make a choice 😉
Anyway the recipe below servers 5 and the wafffles freeze just fine
  • 2 medium bananas, very ripe
  • 2 eggs
  • 3 tablespoons maple syrup
  • 1 tablespoon coconut oil
  • ¼ cup coconut or almond milk
  • 1 cup almond flour/meal
  • 1 cup unsweetened shredded coconut
  • 2 tablespoons arrowroot powder
  • 1 tablespoon cinnamon
  • 1 teaspoon baking soda
  • pinch of salt
  1. Preheat waffle iron.
  2. Place bananas, egg, maple syrup, coconut oil, and milk in a food processor and puree until smooth.
  3. Add ingredients from the food processor into a large bowl and add almond meal, shredded coconut, arrowroot flour, cinnamon, baking soda, and salt and mix well to combine.
  4. Pour mixture into waffle iron (mine was non stick and they didn’t stick at all, but before careful and maybe grease yours before).
  5. My batter made 5 waffles total.
  6. Top with bananas, syrup, and even some grass fed butter. That would be real good.
