Chocolate Banana Cookies – Super Easy and Kids Love Em, Duh, They’re Cookies

Today’s recipe is a quick and easy grain free cookie recipe. Sorry Lurong Challengers, this one isn’t for you since it does use chocolate almond butter that has some sweetener in it. I suppose if you’re really desperate you could make them with plain unsweetened almond butter and just add some cocoa powder(unsweetened as well). Hmmmm, maybe I’m desperate. Maybe I’ll try that. OK, here is my promise to make a Lurong Chgallenge friendly cookie within the next week.

This is a batch I made two weeks ago on a particularly crappy day (when I was on the 21 Day Sugar Detox). The family however was not. Somehow baking always makes me feel better so to the kitchen I headed and threw these together for a quick dessert for our big family dinner night. They were a hit. and I’ll be honest, there were two cookies left the following morning and I felt like they were healthy enough I let them eat them for breakfast.

Grain Free(Paleo) Chocolate Banana Cookies

  • Preheat Oven to 350 degree
  • mash bananas(the riper the better) in a large mixing bowl. I just use my immersion blender for this.
  • Add the chocolate almond butter and vanilla extract to the bowl and combine until smooth.
  • Pour vanilla extract.
  •  In a seperate bowl sift together baking soda, cinnamon, salt, and almond flour.
  • Slowly add this to the chocolate batter while blending.
  • Scoop into 4 rows, three across and bake for 10-12 minutes. I baked two trays at a time so I would only need to wait one round and it worked fabulously.
  • Enjoy(unless you’re on a Sugar Detox or Lurong Challenge or avoiding sweeteners in general, then don’t, Just eat the banana. and a scoop of almond butter to balance it out)
