A hearty and warm soup that only takes a short time to prepare and cook that contains plenty of vitamins, minerals, and nutrients that our body needs to stay in shape.
  • 1 Butternut Squash – Cleaned and Chopped
  • 2 Carrots – Cleaned and Sliced
  • 3 Vidalia Salad Onions – Cleaned and Sliced
  • 2 Tablespoons (50 g) Garlic Herb Butter
  • 1 x 15 oz (440 ml) Coconut Milk
  • 2 Cups (475 ml) Chicken Broth
  1. • Place a saucepan over low heat and melt the garlic herb butter. Make sure you melt the butter but not burn it.
  2. • Add the butternut squash, carrots and Vidalia onions once the butter is melted.
  3. • Let the vegetables cook until the butternut squash and carrots cook until they have softened.
  4. • Add the chicken broth to the saucepan once the vegetables are soft. Let the ingredients cook further for 10 minutes.
  5. • Add the coconut milk after 10 minutes. Give the soup a stir and let it cook for another 15 minutes on low heat, making it simmer.
  6. • Once the soup is simmering, remove from heat and let it cool slightly.
  7. • Put the soup into a blender or food processor and blend completely.
  8. • Serve whilst still warm and enjoy a healthy soup with your loved ones.
