Brussel Sprout Chips And Day 2 Detox

20120830-211200.jpg Today was day 2 of school, full on daycare, full days of work and the 21 Day Sugar detox and it went off fairly uneventfully. Sure there were tears getting on the bus, I went to make lunch and realized we had no grab and eat food and I burnt a big portion of the brussel sprout chips I made but we’re all still standing with smiles on our faces so I’ll call the day a success.

So…. The Brussel Sprout chips… If you read the Nom Nom Paleo newsletter (which you should) you probably saw that she suggested instead of wasting the outer leaves of brussel sprouts that you save these big guys when cleaning, toss them with some oil and bake them. I thought the idea was brilliant and promptly forgot about it. That was until today when I was cleaning about 4 pounds of brussel sprouts to make a big batch of brussel sprouts and bacon for our family dinner this evening and I had a sink full of outer leaves. I was SO excited!!! I immediately preheated the oven to 400, washed the outer leaves and tossed them in some oil, sprinkled with a bit of salt and spread them evenly across a cookie sheet.

I then continued to prep the rest of my dinner by slicing the rest of the sprouts for a brussel sprout slaw, chopping the bacon, pulling out the chicken, etc., etc… Suddenly my smoke alarm was going off due to the brussel sprout chips I had cooking in the oven. It turns out the crisp up pretty quickly- I would say check them at 10 minutes if not before… I had to throw a bunch of them out but those that remained were a tasty treat.

The Sugar Detox thing was pretty low key. Here is what I ate:

  • 2 fried eggs and 3 pieces of bacon, a LARGE cup of coffee and coconut milk(unsweetened)
  • 2 pinches of coconut flakes
  • 2 gf burger patties with all the right fixins from The Burger Co (They also just added sweet potato fries to their menu… Full disclosure- Steve and I shared a small order but he had just worked out so we justified it…)
  • 2 pinches of coconut flakes and an iced coffee with coconut milk
  • 1/2 cup Brussel Sprout Chips
  • Large Roasted Breast of Chicken, Brussel Sprouts and Bacon slaw, Salad of Garden Grown Cucumber and Tomatoes

I am realizing that I am a horrible evening snacker. OK, Maybe I’m not just realizing it, I am acknowledging it. I was just digging around in the kitchen looking for something right after dinner. I wasn’t at all hungry but was craving the ritual of sitting down and enjoying something after the kids are in bed. I made bone broth with the leftover chicken bones so I had a cup of that. Maybe I need to buy some more sprouts to try my hand at another batch of chips for tomorrow night…
