Baked Egg In Ham Cups

Baked Eggs in Crispy Ham Cups 4

Ingredients

4 Slices Ham or 8 Rashers Bacon
1/2 Cup Sweet Green Peppers – Chopped
4 Eggs
1/4 Teaspoon Pepper
1/3 Cup Cheddar or Mozzarella Cheese – Shredded

Method

Preheat oven to 375 degrees Fahrenheit
Lightly oil some ramekins or a muffin tin and place to one side
Take the slices of ham (and use a cookie cutter to cut the ham into rounds), then place each slice into the lightly oiled ramekins or muffin tins. If using the bacon rashers cut them in half and line the ramekins or muffin tins with four slices
Any ham or bacon you have left over can be cut into smaller pieces and you can use them later
On top of the ham or bacon now sprinkle some of the chopped green peppers
Then on top of these place one of the eggs
Sprinkle the top of each egg with some of the leftover ham or bacon, some more of the green peppers and then a dash of pepper
Then on top of these sprinkle some of the cheese
Place in the oven and cook until the whites have set, but the yolk remains runny
They should only need to be in for about 15 minutes
Once ready remove from oven let them cool for about 5 minutes before removing from muffin tray or leave in ramekins and serve
