Paleo Recipe - Liver & Onions

Another Quick & Simple Recipe To Try – Liver And Onions

This is one dish that my husband and I love eating. However, I prefer to use lambs liver rather than pork or beef as this recipe recommends.

2 Large Slices Of Pork or Beef Liver (or 4 Small Lambs Livers)
3 Large Onions – Sliced (I prefer using red rather than white onions)
4 Tablespoons Lard or Butter
Salt and Freshly Ground Pepper To Taste

1. Heat a large frying pan or skillet over a low to medium heat.
2. To this add 3 tablespoons of the lard or butter.
3. Once the lard or butter has heated up add to this the sliced onions.
4. Now cook the onions very slowly making sure that you stir them frequently.
5. You need to cook the onions until they become caramelised and soft, which should take around 20 to 25 minutes.
6. Once you are getting close to the onions being cooked place another pan or skillet on to the hob over a medium to high heat.
7. Into this second pan place the rest of the lard or butter and allow to heat up then add to this the liver and allow it to cook on each side for about 3 minutes. However, if you are going to be using lambs livers rather than beef or pork cook on each side for about 1.5 minutes.
8. Once the liver is cooked place on a plate and top with the onions, then serve.
9. To add a little more zing to the dish why not serve with a little salsa you’ve made.
